Charles A. Sims, Ph.D., is a Professor in the University of Florida’s Department of Food Science and Human Nutrition. He researches quality characteristics of fruits and vegetables with an emphasis on factors that influence the sensory characteristics and consumer acceptability of these products. Dr. Sims holds a Ph.D. in Food Science from the University of Arkansas.
