Susan Percival

Susan S. Percival, Ph.D., is a professor of nutritional sciences and the chair of the Department of Food Science and Human Nutrition at the University of Florida. She received her Ph.D. in biological science from the University of Texas, Austin in 1985. She completed post-doctoral research at Texas A&M University’s Department of Biochemistry and Biophysics from 1987 to 1989. Dr. Percival’s research program focuses on enhancing immunity by dietary components with an emphasis on a specific immune cell. Using both human subjects and cell culture models, she investigated the mechanisms by which immunity is modified by diet. The goal is to improve immune function while reducing damaging effects associated with chronic inflammation.
